First of all the highly recommended history of the amen break, which relates very directly to Eco and the reconfigurable scores.

Usman Haque's project Open Burble project is a good example of a contemporary artist creating work for collective reception.

Lawrence Lessig is the founder of Creative Commons (an alternative to regular copyright). While Lessig isn't an artist his arguments in favor of free culture are very much in line with Barthes' argument : "The text is a tissue of quotations drawn from the innumerable centres of culture." And, just for counterpoint, Andrew Keen is sort of the other end of the spectrum. He argues that our culture is actually impoverished by massive public participation in creative output.
